I tried this recipe tonight, and it was so easy and turned out so perfectly, I thought I'd share it!

I found the recipe at Health.com, but the credit goes to "Cooking Light - Super Fast Suppers".
Place a large nonstick skillet over medium-high heat until hot; add tuna. Cook 3 minutes on each side or until desired degree of doneness. Serve with sour cream mixture.

Now, I prefer my tuna medium-well, with only a touch of pink (unless I'm eating sushi, of course). So I cooked mine for about 5 minutes a side. It was super easy, super delicious, Mark loved it, and it fits into my "protein and veggie" way of eating. I served it with some oven roasted broccoli and a tomato and avocado salad.

Let me know it you give it a try!

Cheers!

My last post introduced my One Little Word for 2014, "fitness", and why I chose that word. So far, I've had a great month living my word and getting my priorities front and center. I want to share now a bit more about how I'm doing this - how I'm going to get fit in all aspects of my life this year.

Reflecting on fitness, I find that I am already fit in many ways - maybe things aren't as bad they seem! Mark and I are financially fit...we have well defined and executed retirement/savings plans, no debt other than a mortgage, and a five year plan to pay off that mortgage. Honestly, this makes being able to focus on the other aspects of fitness so much easier. My emotional and social fitness are also strong, and I credit my relationship with Mark for that. I love it that he "gets" me and knows when to be supportive or encouraging or give me a reality check. And he knows when I most likely just need a snack. I also have a great core group of friends, and I know that my family is available whenever I need them. I think this makes a great foundation, but I'm looking to build up from here.

So, what do I intend to do to have more fitness this year? Because it won't just happen. Well, I intend to choose things that make me fit. It's all about choices. We all have them, and we all have to live with them.

I am going to place a renewed focus on expanding my knowledge base as a nurse practitioner. I kind of let this go after graduation - I was so burned out from school! And while I constantly am learning something new, I want to read more, study more, get more mentally fit.

To improve my emotional fitness, I intend to exercise more patience, be more compassionate, share more of myself and let others feel more comfortable sharing with me.

I intend to be more socially fit by getting out there more...take advantage of the vibrant downtown life were we are lucky to live - concerts, plays, sporting events... yes, please!

I intend to nurture my spiritual fitness by engaging in things that inspire me, move me and bring me peace. To me, this means getting outside and experiencing nature, or listening to music - it's always amazed me how music has a way of lifting me up.

To enhance my financial fitness, I intend to continue tracking all expenses. If you are not doing this, stop reading, set up an Excel spreadsheet, and start doing this. Now. Seriously. I will continue contributing to retirement and savings plans - automatic deductions, people.

And last but not least, I intend to totally ramp up my physical fitness. I have started the year off right by eating well (protein and veggies), but will occasionally splurge, because chocolate is good for both spiritual and mental fitness! I intend to add more varied exercise, including cardio, strength and flexibility. I tend to just do cardio, but that is not optimal. I am signed up for a few events, including a triathlon, so I've got goals to work toward, which I find very motivating.

So there will be more of some things, less of others on my journey to fitness.

One Little Word (TM) is a tradition of choosing one word that you focus on, meditate on, embrace and welcome into your life during the year. The concept, created by Ali Edwards, allows you to reflect on your chosen word throughout the year and let it help you remain true to what you want to accomplish or change. In the past, I have chosen the word "bicycle", "best"; "refine", and "GTD -Getting Things Done". Each year, having a word that is held close to mind and heart has helped me reach some goals that I may not have otherwise attained. This year, I'm taking it to a new level! I've signed up for Ali's workshop, in which she helps guide the students through the process of keeping our words front and center in our lives. So far, it's been a great class, and I've enjoyed reading how others are choosing and using their words. This blog post encompasses some, not all, of the first assignment. It's long enough as it is. Really.

For 2014, I wanted a word that could be applied to many aspects of living. So the word I have chosen is "FITNESS". I am looking at the broad definition of this word as it applies to overall health - not just physical health, but mental, emotional, social, spiritual and financial fitness. I believe it's through a balance of these that we can strive for optimal health. I thought about choosing the word "balance", but I like the empowering feeling and strong imagery I get with the word "fitness".
or of several combinations of these aspects will leave you miserable and
wanting. In other words, chasing perfection in physical fitness (or any
of the other aspects of health) generally takes from other aspects. This
leaves you unhealthy over-all. Some of the least healthy people we know
have perfect six-packs and incredible work capacity. Yet, their work
lives, home lives, and spiritual lives suffer greatly. By the same
regard, one who does not have adequate physical fitness cannot be truly fit
either.” - GPP Fitness

my job, my home is comfortable and inviting, my friends are rock stars. But
there are things that need more attention. Like my creative outlets, my
continuing education for my work, my physical fitness and diet. Not one
specific thing is totally in the toilet. I read an occasional journal article; I can run 6 miles. But I think I can do better. I know I can. I wanted a word
that would apply to all aspects of health. And I found it! Fitness. Soundness
of body and mind. Optimal health. I
love it! It’s almost as if this word is giving me permission to take care of
myself. I can give myself permission to spend time creating. It’s okay to take
time to get outside and play. It's also okay to study or read a journal on a weekend or when I'm "supposed" to be relaxing. And exercising and eating well are clearly the right thing to do.

Most years do, right? I thought I'd do a year in review, good and bad. In chronological order...

We started the year living at my parent's house while our condo was remodeled. We enjoyed many nights of Train! Thanks, Mom & Dad!

The snow was excellent this year, and we took advantage! Mark and I had many chances to get out and skate-ski.
My niece, Emma, officially became a teenager (she's been acting like one for years!). She's pretty much awesome.

Feared for my life a couple of times traveling to Park City in this...It was actually pretty sweet!
Learned how to play, and now fully embrace, the game of backgammon:

Finished up the remodel and got to move back home (will do a 'before and after' post sometime):
One minute it's 100 degrees, the next it seems like we're back in the middle of winter. I want to make sure that Mark and I get to do the fun things we love this summer, so we made a summertime bucket list. Short, sweet, and do-able:

1. Go camping - up in the Unitas, even for just one night. Campfire cooking and s'mores...need I say more?

2. Go hiking. We love the Salt Lake Overlook, Dog Lake, White Fir Pass and Park City Overview trails in Millcreek Canyon. We also like the Red Pine Lake and White Pine Lake trails in Little Cottonwood Canyon.

Park City Overview

Red Pine Lake

3. Go cycling. We've done a few rides already, but we just want to get out on the bike some more. City Creek Canyon and Legacy Parkway are great, traffic-free rides.

4. Make raspberry jam.

5. Dinner at Caffe Molise on a Friday night. Sit outside on the patio and enjoy some live jazz music.

6. An outdoor concert at Deer Valley

7. Brunch at Ruth's Diner. Love sitting on that patio in the summer!

So what's on your summer bucket list?

Cheers!
And I make a lot of them. I make one for each month, a few for the entire year, and recently have started making goals that span the year starting on my birthday. It seem like a lot of goals, and I don't usually complete all of them. But that's not the point. The point is this:

A goal is not always meant to be reached, it often serves simply as something to aim at.

Bruce Lee

It's good for me to have goals. They give me something to work on mentally, spiritually or physically. They help me re-examine how I spend my time. And not all of them are serious and mature. Some are fun and frivolous.

At the moment I have several "in progress" goals. January's goal is to spend a few minutes each week in planning. I'm a big fan of David Allen's Getting Things Done principles, and one component of the system is a weekly planning session. I have been doing this for many years, but was only planning certain things, like menus, so I wanted to be more focused on reviewing all of my projects and scheduling time to focus on the steps needed to complete them. So this month, I have taken a few minutes each week, reviewing my goals, projects and tasks, and fitting these things into my week. I have already seen a boost in my productivity. Simply reviewing my goals weekly helps me focus on those things that matter most to me.

For example, one of my yearly goals for 2013 is to exercise for 3 hours each week. Which is 180 minutes per week. As in 9,360 minutes in one year. So, I set up a spread sheet to track this - I enter the date, the exercise and the minutes, and the Excel spread sheet keeps my running total (pun intended) and shows me how many minutes left to reach my goal. By reviewing all my weekly obligations, I know exactly which days I will be able to spend some time exercising, then can plan accordingly (take my gym bag to work, etc.). So far this month, I'm a bit below what I need to average each week, but I'm making progress. And that's the object of goals - to work toward something, not necessarily achieve perfection.

February is right around the corner. I think I'll keep the weekly planning sessions. My goal for February is to spend 10 minutes, 3 times per week, stretching. I mean, I can hardly touch my toes. I'll keep you posted on my progress.

What goals are you working on this month/year?

Cheers!

Happy New Year! Before moving on to 2013, let's see how 2012 finished up:

Mark's birthday was awesome. He received many letters from his family and friends wishing him a happy birthday and sharing some sweet memories.

For my goal of doing "something epic" for Mark's 60th birthday, I surprised him with a Caribbean cruise over the Christmas holiday. I disguised the gift as packing in a box with a gift certificate. It took him a minute to figure out what the surprise was, but once he did, he was thrilled! He has always wanted to take a trip for Christmas and I was so happy all the planning and arranging worked out!

We started remodeling our condo in early December. To make the process more tolerable, we moved out of the condo and into my parent's house (thanks, Mom and Dad!). It's been fun being back "home" for the holidays. The remodel is going well, and hopefully will be done in the next three weeks or so.

Just thinking about our beach wedding on this cold, snowy day in Utah makes me long for a vacation (which is actually coming up sooner than some people might think! Shhh, don't tell - more to come!). But since we are in Utah, we celebrated with sushi at Takashi* and dessert at the New Yorker - and we enjoyed every minute of it!
Ten years, coming right up. Already planning that one!

* I love the great service at Takashi. We sit at the bar (yeah, our favorite local bar is a sushi bar) and almost always have the same sushi chef. He knows what I want and in what order, so I don't even have to ask. It's so nice to hear "would you like an Imagine roll next?". Yes, please! And seriously, we haven't been there since June. It's just awesome.

I love making pies, but sometimes the crust just drives me insane. It falls apart; it sticks to the counter, the wax paper, the rolling pin...augh! Lately, I've caved into the convenience of the store-bought pie crust from Pillsbury. In a pinch, they are great - flaky, easy to use. But I've wanted to revisit homemade crust, and found this recipe from Bon Appetit. I then set about making an apple pie (I like Braeburn apples for my apple pie - a nice combo of sweet and tart).

It. Was. Perfect.

Seriously. Easy to make, easy to roll out, nothing stuck, it didn't fall apart. And, it tasted great! Buttery and flaky. Sigh. I love it. I followed the directions, but only had to use about 1/2 cup ice water to achieve the correct consistency. And I would probably delete the sugar if I were making a savory pie, like a chicken pot pie. I cannot wait to try this with my chocolate pie. So, here's to the holidays! May your pie baking be stress-free!

Cheers!
Checking things off the "40 Things" list. This falls under the "coffee and classical music" heading (#29).

I also recently watched one of the American Film Institute's "10 top 10" movies, "Anatomy of Murder", with Jimmy Stewart and Lee Remick (#39).A fabulous courtroom drama. Loved it. Had it on while organizing all my crafting ribbon. Good thing it was a long movie! This trailer is pretty good, in its own right:

Yesterday was a state holiday here in Utah. July 24th. It was National Tequila Day, you see, so we all got the day off. There was a big parade in the morning, and lots of fireworks at night! We just go crazy around here celebrating what some might say is an obscure holiday.

Mark and I celebrated by making Raspberry Margaritas:

Recipe (makes one cocktail):

2 ounces tequila (Roger Clyne's Mexican Moonshine, in our case)

1/2 ounce Cointreau

1/2 ounce raspberry liquor

1/2 ounce fresh lime juice

1 fresh or frozen raspberry

1 lime wheel

Pour all liquid ingredients into a cocktail shaker full of ice. Shake! Pour into a glass (with a salted rim, if desired). Add raspberry and lime garnish. Enjoy!

You may also blend this or substitute other fruits and liquors.

Happy 24th!

7 Things about Myself:

1. I hate flying. Love airplanes, hate being in one when it's in the air, doing what it was built to do.
2. I love traveling. Yes, I see how this doesn't actually go with the first one. Maybe I don't love traveling. But I love arriving.
3. I wear my lambswool-lined leather slippers year round. My feet are always cold. Always. (I am aware that I may have offended those who do not support the use of animals as footwear/clothing. Therefore, I will not share the fact that I recently purchased five [five!] pairs of leather shoes. Oh, wait...) Fortunately, this blog has few readers.
4. My husband and I got married on a beach in Jamaica. It was perfection.
5. I hate my oak paneled refrigerator and dishwasher. I mean, really...are we trying to pretend there isn't a fridge in the kitchen? Fortunately, I am actively planning their removal. It's only been 9 years.
6. I could spend all my free time reading. Sometimes I even do.
7. I cannot stand listening to the radio. Drives. Me. Insane. I am very happy with the USB connection in my car.

That's it!

And now, I pass the award along to....

Jen at I Heart Organizing. Her blog is full of great ideas for organizing and decorating.

Kate at The Small Things Blog

So that's just two, but I love their blogs. And maybe they aren't interested in this award, but I pretty much think they rock and wanted to share them with you!

And now, for a check in on the 40 Things...

I memorized one poem. I chose a short one to start. This is probably my all-time favorite poem. I see a lot of me in it.

The Road Not Taken, by Robert Frost

Two roads diverged in a yellow wood,
And sorry I could not travel both
And be one traveler, long I stood
And looked down one as far as I could
To where it bent in the undergrowth;
Then took the other, as just as fair,
And having perhaps the better claim,
Because it was grassy and wanted wear;
Though as for that the passing there
Had worn them really about the same,
And both that morning equally lay
In leaves no step had trodden black.
Oh, I kept the first for another day!
Yet knowing how way leads on to way
I doubted if I should ever come back.
I shall be telling this with a sigh
Somewhere ages and ages hence;
Two roads diverged in a wood, and I-
I took the one less traveled by
And that has made all the difference.

And, in reviving a weekend tradition that Mark and I used to share, last Sunday we sat on the couch with our coffee and hot chocolate and listened to Mendelssohn's Octet for strings. Quite lovely, really, and a very relaxing way to start the day.

Here's a version:

Checking a couple things off the list.

Well, that was a long post. Thanks for hanging in there!

Cheers!
I had fun with it. So I thought I would try it again. Some of these are repeats, some are one's I didn't get around to last time. Here's the list, in no particular order. Simply unheard of.

It's May Day, and while other people choose to riot, I choose "Peace"!

My sister, Catherine, over at "Hello, New Day", has been participating in a Photo a Day challenge by Fat Mum Slim. Basically, there is a prompt for the day, you take a picture that relates to the prompt, and post it. I have enjoyed looking at Catherine's photos, and decided to play along this month.

Today's prompt is "peace", and here's my photo:

I may not post every day. Let me rephrase: I will not be posting everyday. There. I said it. But I will post!

I must say, I successfully rocked my April goal, following the Atkin's diet. Of all the meals I ate in April, which we can assume to be 90, I only strayed on three of them. Yeah, that's right. Three. And it was okay, really. I missed dessert and bread, but I didn't crave either one. I found a great alternative to potato chips - Parmesan crisps. Salty and crunchy. Thank you, Harmon's. And I love my new breakfast protein shake that uses almond milk instead of 1% milk. I dropped a few pounds, lost a few inches, and my skin complexion is so smooth, it's freaky. Of course, you know what that means. Guess I'm going to have to continue cutting back on those nasty carbs. Maybe not each and every day, but certainly most of the time.

Which brings us to May's goal...

May is "add weights to the workout routine" month. It's pathetic, I know, because I should already be doing this. But I dread lifting weights. I do it once a month (why I even bother, I have no idea). To me, it is more boring than the treadmill. And I hate the treadmill. It is a necessary evil, however, and this month, I'm giving it a good faith effort. Maybe I should hire a personal trainer to help me out.

In other fun news, I wanted to give a big "thank you" to Lisa Dickenson, of one of my favorite blogs, "Gettin' By". She is a fantastic scrapbooker who has a great writing style and never fails to make me laugh, smile, or be inspired by her posts. She recently hosted a giveaway on her blog, and I won! Yay! I will be the recipient of two issues of Scrapbooks, Etc. magazine, which will be a nice way to get inspired to get my craft on. Go check her out. She's a hoot. And in the spirit of giving, I will be hosting a giveaway on my blog this month. So stay tuned!

And finally, a few weeks ago Mark and I participated in a couple of the events that were part of the Salt Lake City Marathon. Mark ran the 5K:

Mark's and my goal for March was no eating out. It wasn't too bad, really, but we sort of missed the social activity that eating out brings us. Which leads us to April. Last year, I picked a month to be "low-carb", and it was challenging, but certainly doable. And so I'm doing it again. I find that by really reducing the carbohydrates I eat, I see the following benefits: more energy, some pounds come off, and, interestingly, my skin complexion improves. I'm sure it's from not eating sugar, but I think the highly refined grains found in pasta and bread are just not that good for you. So, I'm giving it another go this April. Mark, however, is not participating, and as I write this he is pulling two loaves of homemade bread out of the oven and getting ready to make some strawberry ice cream. I know, right? Thanks a lot! But, I will persevere.

Here's a great research article from the Journal of the American Medical Association about the health impact of low-carb eating, Comparison of the Atkins, Zone, Ornish and LEARN Diets for Change in Weight and Related Risk Factors Among Overweight Premenopausal Women. Basically, the authors of the study followed women who ate the Atkins diet versus the others (which included other low-carb diets, low fat vegetarian diets, as well as the LEARN program), and found that those who ate the high protein, high fat, low-carb Atkins formula had more weight loss and bigger decreases in the levels of triglycerides, increases in HLD (good cholesterol), decreases in LDL (bad) cholesterol levels, insulin levels, glucose levels, and blood pressure measurements.

I by no means consider myself to be overweight. But I have my trouble zones and would like to get rid of them!

So, it may not be for everyone, or for everyday, but I thought I'd give it a go. So far, so good. And it's already 4pm.Lori Passeyhttp://www.blogger.com/profile/15884487527708030399noreply@blogger.com2
